Sadly, my house hasn’t been much fun recently. With both my husband and I quite unwell (he – a chest infection, me – a sinus infection) all we have been craving is a home cooked remedy.
~ Chicken Noodle Soup ~
There really is something so soothing and calming for the body about this dish. I am not sure if it is the simplicity of the flavours, the warmth of the broth, or enjoying the hearty noodles that makes it the perfect accompaniment for sitting on the couch in your pj’s while watching a movie.
This has been one of the only things to help get me through the past 8 days…
Initially I had made this for my husband as he became unwell before I did, and this was the first time I have ever made Chicken Noodle Soup. What was I thinking? It was very easy, and well worth making!
~ Chicken Noodle Soup ~
2 Chicken Breasts (pre-cooked, in the oven 180 degrees 30-40mins)
1 packet of Vermicelli Noodles
1 large tin Corn Kernels
3 Litres of Chicken Stock
2 Brown Onions
3 Garlic Cloves
1 Bunch of Shallots
Fresh Basil and Parsley
Butter

Shred pre-cooked chicken finely and place aside.
Melt butter in a large saucepan and fry garlic, onions and shallots until translucent.
Place 3 Litres of chicken stock, chicken and corn in to saucepan and bring to the boil.
Soak the Vermicelli noodles until soft, drain and place in the soup.
Cover, and simmer for 20 minutes.
We found this best to be served piping hot, with a yummy crusty bread roll and some butter. It instantly warmed our bellies and made us forget about our sickness (even if just temporarily!)
I highly reccommend this simple, quick and easy dish as we head in to the cooler months.
